Blackberry Cheesecake Bars Recipe
Ingredients:
- 1 ½ cups graham cracker crumbs
- 6 tablespoons unsalted butter, melted
- ¾ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup blackberry preserves
- Fresh blackberries for garnish
Instructions:
Preheat oven to 350°F and line a baking dish with parchment paper.
In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of the dish to form the crust.
In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, followed by vanilla extract.
Pour the cream cheese mixture over the crust and spread it evenly.
Drop spoonfuls of blackberry preserves onto the cream cheese layer. Use a knife to swirl the preserves into the cream cheese.
Bake for 25-30 minutes or until the edges are set and the center is slightly jiggly.
Let the bars cool completely, then refrigerate for at least 3 hours or overnight.
Cut into bars, garnish with fresh blackberries, and serve chilled. Enjoy!
