Chocolate-Covered Mousse Cakes
Ingredients:
For the Chocolate Cake:
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup boiling water
For the Chocolate Mousse:
- 1 1/2 cups semisweet chocolate chips
- 2 cups heavy cream, divided
- 1 teaspoon vanilla extract
For the Chocolate Ganache:
- 1 cup semisweet chocolate chips
- 1/2 cup heavy cream
Directions:
Chocolate Cake:
1. Preheat the oven to 350°F (175°C). Grease and flour individual cake molds or a muffin tin.
2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
3. Add milk, vegetable oil, egg, and vanilla extract. Mix until well combined.
4. Stir in boiling water until the batter is smooth. The batter will be thin.
5. Pour the batter into the prepared molds or muffin tin.
6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
7. Allow the cakes to cool completely.
Chocolate Mousse:
1. In a heatproof bowl, melt chocolate chips with 1 cup of heavy cream over a double boiler or in the microwave. Stir until smooth and let it cool to room temperature.
2. In a separate bowl, whip the remaining 1 cup of heavy cream and vanilla extract until stiff peaks form.
3. Gently fold the whipped cream into the cooled chocolate mixture until well combined.
Assembly:
1. Remove the cooled chocolate cakes from the molds.
2. Spoon or pipe the chocolate mousse onto each cake.
3. Pour a layer of chocolate ganache over the mousse.
4. Optionally, garnish with fresh berries.
