Ingredients:
- 4 large eggs
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup unsalted butter, melted
- 1/4 cup granulated erythritol
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- A pinch of salt
- Optional: Chopped nuts for texture
Directions:
1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
2. In a large bowl, mix together mashed bananas, eggs, melted butter, and vanilla extract.
3. In a separate bowl, whisk together almond flour, coconut flour, erythritol, baking powder, cinnamon, and salt.
4. Gradually add the dry ingredients to the wet ingredients, stirring until well combined.
5. If desired, fold in chopped nuts for added texture.
6. Pour the batter into the prepared loaf pan, spreading it evenly.
7. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
8. Allow the banana bread to cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
