Moist oil chocolate cake
125 g white sugar
3 eggs separated
125 ml fresh milk
100mls vegetable oil
150g cake flour
15 g baking powder
20 g cocoa powder
2 g instant coffee
1/4 tsp salt
100 ml hot water
Method
Preheat oven to 180 degrees Celsius
Prepare two 7 " cake pan
Sieve flour,salt,baking powder and cocoa powder set aside.
Beat sugar and egg yolk until creamy .
Add oil ,milk and vanilla essence and mix
Add sieved dry ingredients in (3) batches do not over mix
Mix instant coffee and hot water add the mixture and mix
Whisk egg whites until stiff and fold completely into the mixture.
Divide the mixture between the pans and bake for 30 to 35 mins
Frosting
250g white wooden spoon margarine
500g icing sugar
1 tsp vanilla essence
Or 2cups phino whip powder
2 cups of water / milk
