Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 cup granulated sugar
- 1 large egg
- 1 tablespoon cold water
For the Orange Jelly:
- 1 cup fresh orange juice
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- Zest of one orange
For the Filling:
- 1 1/2 cups heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Orange segments, for garnish
- Fresh mint leaves, for garnish
Directions:
Tart Shell:
1. In a food processor, combine flour, chilled butter, and sugar. Pulse until the mixture resembles coarse crumbs.
2. Add the egg and cold water. Pulse until the dough comes together.
3. Turn the dough out onto a floured surface, knead it briefly, and shape it into a disk.
4. Wrap the disk in plastic wrap and refrigerate for at least 30 minutes.
5. Preheat the oven to 375°F (190°C).
6. Roll out the chilled dough on a floured surface and transfer it to a tart pan.
7. Press the dough into the pan, trimming any excess.
8. Prick the bottom with a fork and bake for 15-18 minutes or until golden brown. Allow it to cool.
Orange Jelly:
1. In a saucepan, combine orange juice, sugar, and cornstarch. Whisk until smooth.
2. Place the saucepan over medium heat, stirring constantly until the mixture thickens.
3. Remove from heat, stir in orange zest, and let it cool.
Filling:
1. In a mixing bowl, whip the heavy cream until soft peaks form.
2. Add powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
Assembly:
1. Spread the orange jelly over the cooled tart shell.
2. Spoon the whipped cream over the jelly layer, spreading it evenly.
3. Garnish with fresh orange segments and mint leaves.
4. Chill in the refrigerator for at least 2 hours before serving.
