Minty Green Bliss Pie
Ingredients:
_For the Crust:_
- 2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
_For the Filling:_
- 1 quart (4 cups) mint chocolate chip ice cream, softened
- 1 cup milk
- 1 package (3.4 oz) instant vanilla pudding mix
- 1 teaspoon mint extract
- A few drops of green food coloring (optional)
_For the Topping:_
- 2 cups whipped cream
- Chocolate shavings for garnish (optional)
- Green sprinkles for decoration (optional)
Directions:
_For the Crust:_
1. In a bowl, combine chocolate cookie crumbs and melted butter.
2. Press the mixture into the bottom of a 9-inch pie dish to create the crust.
3. Chill the crust in the refrigerator while preparing the filling.
_For the Filling:_
1. In a large mixing bowl, whisk together milk and instant vanilla pudding mix until well combined.
2. Add softened mint chocolate chip ice cream, mint extract, and green food coloring (if using). Mix until smooth.
3. Pour the filling into the chilled crust.
4. Freeze the pie for at least 4 hours or until set.
_For the Topping:_
1. Before serving, spread a generous layer of whipped cream over the frozen pie.
2. Garnish with chocolate shavings and green sprinkles if desired.
