### Ingredients:
- 2 tablespoons olive oil
- Pinch of salt
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 3 garlic cloves, minced
- 1 small cabbage, chopped
- 1 serrano chile or jalapeño, finely chopped (adjust to taste)
- 14.5 oz (411g) chopped tomatoes with juice
- 6 eggs
- 1/2 teaspoon cayenne
- 1/2 teaspoon coriander
- 1/2 teaspoon cumin
- 1/2 teaspoon caraway seeds
- Salt and pepper, to taste
- Fresh parsley or cilantro, for garnish
### Instructions:
1. **Prepare the Vegetables:** Heat the olive oil in a large skillet over medium heat. Add the chopped onion with a pinch of salt and cook until soft and translucent. Then add the chopped green and red bell peppers, cooking until they start to soften.
2. **Add Garlic and Spices:** Stir in the minced garlic, cayenne, coriander, cumin, and caraway seeds. Cook for about 1 minute until the garlic is fragrant and the spices are toasted.
3. **Incorporate the Cabbage:** Add the chopped cabbage to the skillet, along with the chopped serrano chile or jalapeño. Cook until the cabbage is wilted and slightly tender.
4. **Add Tomatoes:** Pour in the chopped tomatoes with their juice. Stir to combine everything well. Season with salt and pepper to taste. Allow the mixture to simmer for about 10-15 minutes, or until the vegetables are fully cooked and the flavors have melded together.
5. **Poach the Eggs:** Make six wells in the cabbage mixture with the back of a spoon. Crack an egg into each well. Cover the skillet with a lid and cook over low heat until the egg whites are set but the yolks are still runny, about 5-7 minutes.
6. **Garnish and Serve:** Once the eggs are cooked to your liking, remove the skillet from the heat. Garnish with freshly chopped parsley or cilantro. Serve hot directly from the skillet, allowing each person to scoop out their portion.
