Carrot Apple Salad
Ingredients:
- 1 Red Delicious apple
- 1 Granny Smith apple
- 2 tablespoons lemon juice
- 2 cups matchstick carrots (precut bags available at the grocery store)
- 1/4 cup yellow onion, finely diced
- 1/3 cup dried sweetened cranberries
- 1/2 cup vanilla yogurt
- 1/4 cup mayo
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup canned mandarin segments, drained
Instructions:
Cut both apples into matchstick-style pieces and place them in a bowl.
Pour the lemon juice over the apple pieces and toss well to ensure all the apples are coated. Set aside for 5 minutes to allow the apples to soak up the lemon juice, preventing browning.
In a large mixing bowl, add the matchstick carrots.
To the carrots, add the diced onion and sweetened dried cranberries.
After the apples have soaked in lemon juice for at least 5 minutes, add them to the mixing bowl.
Incorporate the vanilla yogurt and mayo into the salad mixture.
Season with sugar, salt, and pepper, stirring all the ingredients together well.
Gently fold in the mandarin segments into the salad.
Cover the bowl and refrigerate for at least three hours to allow the flavors to meld.
Serve chilled and enjoy!
