Chocolate Chip Pumpkin Bars
Ingredients:
2 cups all-purpose flour
1 tablespoon pumpkin pie spice
1/2 teaspoon salt
1 cup unsalted butter, softened
1 1/4 cups granulated sugar
1 large egg
2 teaspoons vanilla extract
1 cup pure pumpkin puree
2 cups semi-sweet chocolate chips
Directions:
Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper.
In a medium bowl, whisk together flour, pumpkin pie spice, baking soda, and salt. Set aside.
In a large bowl, beat butter and sugar until light and fluffy. Beat in egg and vanilla extract until smooth.
Mix in pumpkin puree. Gradually add the flour mixture, mixing until just combined. Fold in chocolate chips.
Spread the batter evenly into the prepared baking pan.
Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Let cool in pan before cutting into bars.
