Craving a taste of Wales? Try these delightful Welsh Cakes! 

Ingredients:
• 2 cups all-purpose flour
• 1 teaspoon baking powder
• 1/2 teaspoon ground cinnamon
• 1/4 teaspoon salt
• 1/2 cup unsalted butter, chilled and diced
• 1/3 cup currants or raisins
• 1 large egg
• 2-3 tablespoons milk
Directions:
. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
. Add the diced butter to the dry ingredients and rub it in with your fingertips until the mixture resembles breadcrumbs.
. Stir in the currants or raisins.
. In a small bowl, beat the egg, then add it to the dry ingredients along with enough milk to make a stiff dough.
. On a floured surface, roll out the dough to about 1/4 inch thick.
. Use a cookie cutter or a glass to cut out rounds of dough.
. Heat a griddle or skillet over medium heat and lightly grease it with butter.
. Cook the Welsh cakes for about 3 minutes on each side, or until golden brown and cooked through.
. Transfer to a wire rack to cool slightly , dust with powdered sugar before serving.
