Ingredients:
For the Cake:
1 3/4 cups all-purpose flour
2 cups granulated sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup buttermilk
1/2 cup vegetable oil
2 large eggs
2 teaspoons vanilla extract
1 cup hot water
2 teaspoons peppermint extract
For the Frosting:
1 cup unsalted butter, softened
3-4 cups powdered sugar, sifted
3/4 cup unsweetened cocoa powder
1/4 cup heavy cream
1 teaspoon vanilla extract
1/2 teaspoon peppermint extract
Pinch of salt
For Garnish:
Crushed peppermint candies
Directions:
Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
Add buttermilk, vegetable oil, eggs, and vanilla extract. Mix until smooth. Stir in hot water and peppermint extract until well combined.
Divide batter evenly between prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Allow cakes to cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
For the frosting, beat butter until creamy. Gradually add powdered sugar and cocoa powder. Beat in heavy cream, vanilla extract, peppermint extract, and salt until smooth and spreadable.
Frost the cooled cake layers, then sprinkle with crushed peppermint candies for garnish.
