Heavenly Strawberry Crumble Cheesecake
Ingredients:
1 1/2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
2 cups fresh strawberries, pureed
1 tablespoon gelatin powder
1/4 cup cold water
2 cups cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
1 cup heavy cream, whipped
1/2 cup granola, for garnish
Additional sliced strawberries, for garnish
Directions:
Combine graham cracker crumbs, brown sugar, and melted butter in a bowl. Press into the bottom of a 9-inch springform pan. Chill for 20 minutes.
Puree strawberries in a blender until smooth.
Sprinkle gelatin over cold water in a small bowl; let stand for 5 minutes to soften.
Warm the gelatin mixture slightly until gelatin dissolves and add to the strawberry puree.
Beat cream cheese, granulated sugar, and vanilla extract until smooth.
Fold in whipped heavy cream and strawberry gelatin mixture until no streaks remain.
Pour filling over the prepared crust and smooth the top with a spatula.
Chill the cheesecake for at least 4 hours, or until set.
Garnish with granola and sliced strawberries before serving.
