Luxury Or Nothing Peach Cupcakes 



Ingredients:
For the cupcake:
1 ½ cups all-purpose flour
¾ cup granulated sugar
2 large eggs
1 ½ teaspoons baking powder
¼ teaspoon salt
½ cup whole milk
1 teaspoon vanilla extract
1 teaspoon peach extract (optional for enhanced flavor)
Zest of 1 lemon
For the frosting:
1 cup unsalted butter, softened
4 cups powdered sugar
2 tablespoons heavy cream
1 teaspoon vanilla extract
Peach food coloring (optional for desired color)
For garnish:
Fresh peach slices
Directions:
Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
Cream butter and sugar until light and fluffy. Add eggs one at a time, then stir in vanilla, peach extract, and lemon zest.
Whisk together flour, baking powder, and salt. Alternate adding dry ingredients and milk to the butter mixture.
Fill cupcake liners two-thirds full and bake for 18-20 minutes.
For the frosting, beat butter until creamy. Gradually add powdered sugar, then mix in heavy cream and vanilla until smooth. Add color as desired.
Once cupcakes are cool, pipe frosting and top each with a fresh peach slice.
