Navajo Tacos
Ingredients:
3 cups all-purpose flour
4 1/2 teaspoons baking powder
2 tablespoons softened butter or ghee
1 ¼ cup whole milk
3 cups vegetable oil for frying
Savory version toppings: 1 lb ground beef, 2 tbsp taco seasoning, 15 oz black beans, 2 cups shredded iceberg lettuce, 3 diced plum tomatoes, sour cream, queso sauce or shredded cheese
Sweet version toppings: Honey, Powdered Sugar
Directions:
Mix flour, baking powder, salt, and butter until crumbly. Add milk to form a soft dough. Rest for 15 minutes.
For savory tacos, cook ground beef with seasoning, adding water to break up the meat. Set aside and prep toppings.
Divide dough into 12 pieces, roll out each to a 6-inch circle, and prick with a fork.
Fry in hot oil at 350°F until golden, folding to form taco shells.
Fill savory shells with beef, beans, lettuce, tomatoes, sour cream, and cheese. For sweet, drizzle with honey and sprinkle powdered sugar.
