Ingredients:
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup unsalted butter, melted
- 2 tablespoons granulated sugar
For the Cheesecake Filling:
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1/2 cup pomegranate juice
- 2 tablespoons all-purpose flour
- Pomegranate arils for garnish
For the Pomegranate Glaze:
- 1 cup pomegranate juice
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
Directions:
1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
2. In a bowl, combine graham cracker crumbs, melted butter, and sugar for the crust. Press the mixture into the bottom of the prepared pan.
3. In a large mixing bowl, beat cream cheese and sugar until smooth and creamy.
4. Add eggs one at a time, beating well after each addition. Add vanilla extract, sour cream, pomegranate juice, and flour. Beat until well combined.
5. Pour the cheesecake filling over the crust and smooth the top.
6. Bake in the preheated oven for 50-60 minutes or until the center is set.
7. While the cheesecake is baking, prepare the pomegranate glaze. In a saucepan, combine pomegranate juice, sugar, and cornstarch. Cook over medium heat until the mixture thickens, stirring constantly.
8. Once the cheesecake is done baking, let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
9. Pour the pomegranate glaze over the cooled cheesecake and spread it evenly.
10. Refrigerate the cheesecake for at least 4 hours or overnight.
11. Before serving, garnish with pomegranate arils.
