Vibrant Apple Beet Slaw with Tangy Citrus Dressing

Ingredients:

2 medium apples, julienned

2 medium beets, peeled and grated

1 cup shredded red cabbage

1/4 cup chopped fresh parsley

1/4 cup chopped walnuts

1/4 cup dried cranberries

2 tablespoons apple cider vinegar

1 tablespoon honey

2 tablespoons orange juice

Zest of 1 orange

Salt and pepper to taste

Directions:

In a large bowl, combine the julienned apples, grated beets, shredded red cabbage, chopped parsley, chopped walnuts, and dried cranberries.

In a small bowl, whisk together the apple cider vinegar, honey, orange juice, orange zest, salt, and pepper.

Pour the dressing over the salad ingredients and toss until everything is evenly coated.

Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together before serving.
