Classic Moist Banana Nut Bread
Ingredients:
½ cup unsalted butter (8 Tbsp), at room temperature
3/4 cup granulated sugar
2 large eggs, lightly beaten
1 ½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
½ tsp vanilla extract
1 cup walnuts, toasted and chopped
½ cup raisins (optional)
Directions:
Preheat the Oven:
Preheat your oven to 350°F (177°C). Grease and flour a 9.25x5.25x2.75 inch bread loaf pan.
Prepare Ingredients:
In a skillet over medium heat, toast the walnuts until golden, stirring constantly to prevent burning. Once toasted, chop them coarsely and set aside to cool.
Mix Wet Ingredients:
In a large mixing bowl, cream together the butter and sugar until light and fluffy. Mash the bananas with a fork until they resemble a chunky applesauce consistency, then add them to the bowl along with the beaten eggs. Mix until well combined.
Combine Dry Ingredients:
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Add Extras:
Stir in the vanilla extract, toasted walnuts, and raisins if using. Pour the batter into the prepared loaf pan.
Bake:
Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
