Ingredients:
For the Crust:
1 1/2 cups graham cracker crumbs
6 tablespoons unsalted butter, melted
1/4 cup granulated sugar
For the Lemon Cheese Cream:
16 ounces cream cheese, softened
3/4 cup granulated sugar
2 tablespoons lemon zest
1/4 cup lemon juice
1 teaspoon vanilla extract
2 large eggs
For the Strawberry Layer:
1 cup strawberries, hulled and sliced
For the Lemon Glaze:
1/2 cup lemon curd
For the Topping:
Whipped cream
Lemon zest strips
Powdered sugar (optional)
Directions:
Combine graham cracker crumbs, melted butter, and sugar; press into the bottom of a springform pan. Chill in the refrigerator.
Beat cream cheese with sugar, lemon zest, lemon juice, and vanilla until smooth. Add eggs, one at a time, beating just until blended. Pour over crust.
Spoon lemon curd over over the cheese mixture.
Gently lay sliced strawberries over the lemon curd layer
Bake at 325°F (163°C) for 40-45 minutes. Let cool, then refrigerate for 4 hours or overnight.
Top with whipped cream, lemon zest strips, and a dusting of powdered sugar before serving.
