Carrot Bundt Cake
Most love Bundt cake in my family. It’s soft, moist fluffy on the inside with crunchy toppings!
Ingredients
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup apple sauce
- 1 tsp ground cinnamon
- 1/4 tsp allspice
- 1/4 tsp nutmeg
- 2 tsp baking soda
- 1 tsp kosher salt
- 3/4 cup vegetable oil
- 1 tsp vanilla extract
- 3 cups finely grated carrots
- 4 eggs
Glaze:
-1 cup powdered sugar
-1 tbsp milk
-1/2 tsp vanilla
Toppings: chopped walnuts
Instructions:
1. Preheat the oven to 350°F. Grease 1 bundt pan.
2. In a bowl, combine all the wet ingredients and sugars. Mix until thoroughly combined.
3. In a separate bowl, mix together all the dry ingredients.
4. Gradually add the dry ingredients to the wet mixture. Once partially mixed, add in the grated carrots. Finish mixing until just combined.
5. Pour in the prepared pan.
6. Bake for 50 minutes or until a toothpick inserted into the center of the cakes comes out clean.
7. Allow the cakes to cool.
For the glazing:
In a small bowl, add powdered sugar, milk and vanilla. Mix well and drizzle on top of the cake. Sprinkle chopped walnuts or pecans. Enjoy!
