Ingredients:

2 cups heavy cream
1/4 cup granulated sugar
2 teaspoons powdered gelatin
2 tablespoons cold water
1/4 cup strong brewed coffee, cooled
2 tablespoons unsweetened cocoa powder
1 teaspoon vanilla extract
1 cup mascarpone cheese
Chocolate shavings or cocoa powder, for garnish (optional)

Directions:

Prepare the Gelatin Mixture: In a small bowl, sprinkle the gelatin over the cold water and let it soften for about 5 minutes.
Heat Cream and Sugar: In a saucepan, heat the heavy cream and sugar over medium heat, stirring constantly until the sugar is dissolved. Remove from heat.
Dissolve Gelatin in Cream: Stir the softened gelatin mixture into the warm cream until completely dissolved.
Make Coffee Mixture: Divide the mixture in half. To one half, add the cooled brewed coffee and cocoa powder. Stir until well combined.
Assemble the First Layer: Pour the coffee-flavored mixture into serving glasses, filling each glass about halfway. Chill in the refrigerator for about 30 minutes, or until set but not firm.
Prepare Mascarpone Layer: Whisk the mascarpone cheese and vanilla extract until smooth.
Add Mascarpone Layer: Gently spoon the mascarpone cream over the set coffee layer in the glasses, dividing it evenly.
Chill: Return the glasses to the refrigerator and chill for another 2-3 hours, or until the panna cotta is fully set.
Garnish and Serve: Before serving, garnish with chocolate shavings or a dusting of cocoa powder if desired.
