Easy and Quick Japanese Pancakes Dorayaki / Filled with Soft Custard 

Ingredients:
1 cup all-purpose flour
2 large eggs
1/2 cup milk
1 teaspoon baking powder
1/2 teaspoon vanilla extract
Butter or oil for cooking
For Custard Filling:
1 cup milk
3 egg yolks
1/4 cup sugar
2 tablespoons cornstarch
1 teaspoon vanilla extract
Instructions:
Prepare Custard Filling:
In a saucepan, heat milk over medium heat until steaming (do not boil).
In a bowl, whisk together egg yolks, sugar, cornstarch, and vanilla extract until smooth.
Gradually whisk the hot milk into the egg mixture.
Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened (about 5-7 minutes).
Remove from heat, transfer to a bowl, cover with plastic wrap (touching the surface of the custard to prevent a skin from forming), and refrigerate until cold.
Make Pancake Batter:
In a bowl, whisk together flour, sugar, baking powder, eggs, milk, and vanilla extract until smooth.
Cook Pancakes:
Heat a non-stick pan or griddle over medium heat and lightly grease with butter or oil.
Pour about 1/4 cup of batter onto the pan for each pancake.
Cook until bubbles form on the surface of the pancake and the edges look set (about 2-3 minutes).
Flip and cook for another 1-2 minutes until golden brown.
Remove from the pan and repeat with the remaining batter.
Assemble Dorayaki:
Place one pancake flat-side up on a plate.
Spread a generous amount of custard filling over the pancake.
Top with another pancake, flat-side down, to sandwich the custard.
Serve:
Serve the Dorayaki warm or chilled. Enjoy as a delightful Japanese snack or dessert!
