Shrimp and Vegetable Stir-Fry

Ingredients:

1 lb (450g) shrimp, peeled and deveined
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 large onion, sliced
2 cups broccoli florets
3-4 stalks green onion, chopped
3 cloves garlic, minced
1 tbsp fresh ginger, minced
3 tbsp soy sauce
2 tbsp oyster sauce
1 tbsp hoisin sauce
1 tbsp sesame oil
2 tbsp vegetable oil (for stir-frying)
1 tbsp cornstarch (optional, for thickening)
1/4 cup water (optional, for sauce)
1 tbsp sesame seeds (optional, for garnish)
Salt and pepper to taste

Instructions:

Prepare the Ingredients:

Wash and slice the bell peppers, onion, and green onions.
Mince the garlic and ginger.
Prepare the broccoli by cutting it into florets.
Peel and devein the shrimp, then pat them dry with a paper towel.

Marinate the Shrimp:

In a bowl, combine the shrimp with 1 tbsp soy sauce and a pinch of salt and pepper. Set aside for 10-15 minutes.

Stir-Fry the Vegetables:

Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat.
Add the garlic and ginger, and stir-fry for about 30 seconds until fragrant.
Add the sliced onions and bell peppers, and stir-fry for 3-4 minutes until they start to soften.
Add the broccoli florets and continue stir-frying for another 3-4 minutes until the vegetables are tender-crisp.
Remove the vegetables from the skillet and set aside.

Cook the Shrimp:

In the same skillet, add another 1 tbsp of vegetable oil.
Add the marinated shrimp and cook for 2-3 minutes on each side until they are pink and opaque.
Remove the shrimp from the skillet and set aside.

Prepare the Sauce:

In a small bowl, mix the remaining 2 tbsp of soy sauce, oyster sauce, hoisin sauce, and sesame oil.
(Optional) Dissolve 1 tbsp of cornstarch in 1/4 cup of water and add to the sauce mixture for a thicker sauce.

Combine and Serve:

Return the cooked vegetables and shrimp to the skillet.
Pour the sauce over the stir-fry and toss to coat everything evenly.
Cook for another 2-3 minutes until everything is heated through and the sauce has thickened.
Garnish with sesame seeds and chopped green onions if desired.
Serve hot with steamed rice or noodles.
