Servings: 4
Prep Time: 15 minutes
Cook Time: 25 minutes
Ingredients
For the Grits:
1 cup stone-ground grits
4 cups water or chicken broth
1/2 cup heavy cream
1 cup shredded sharp cheddar cheese
2 tablespoons butter
Salt and pepper, to taste
For the Spicy Shrimp:
1 lb (450g) large shrimp, peeled and deveined
1 tablespoon Cajun seasoning
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional, for extra heat)
2 tablespoons olive oil
4 cloves garlic, minced
1/2 cup chicken broth
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley (for garnish)
4 slices cooked bacon, crumbled (optional, for garnish)
1/4 cup green onions, chopped (for garnish)
Instructions
Cook the Grits:
In a medium saucepan, bring water or chicken broth to a boil.
Gradually whisk in the stone-ground grits, reducing the heat to low. Cook for 20-25 minutes, stirring occasionally, until the grits are thick and creamy.
Stir in heavy cream, shredded cheddar cheese, and butter. Season with salt and pepper to taste. Keep warm.
Prepare the Spicy Shrimp:
In a bowl, toss the shrimp with Cajun seasoning, smoked paprika, and cayenne pepper (if using).
Heat olive oil in a large skillet over medium-high heat.
Add minced garlic and sauté for about 30 seconds until fragrant.
Add the seasoned shrimp to the skillet and cook for 2-3 minutes on each side until the shrimp are pink and cooked through.
Make the Sauce:
Once the shrimp are cooked, pour in the chicken broth and lemon juice.
Stir to combine, scraping up any browned bits from the bottom of the skillet. Simmer for 1-2 minutes until the sauce slightly thickens.
Serve:
Spoon the creamy grits onto plates or into bowls.
Top with the spicy shrimp and spoon the sauce over the shrimp and grits.
Garnish with chopped parsley, crumbled bacon (if using), and chopped green onions.
Tips:
Grits Consistency: Adjust the consistency of the grits by adding more cream or broth if they become too thick.
Spice Level: Control the heat by adjusting the amount of cayenne pepper or Cajun seasoning.
Add-Ins: Consider adding sautéed bell peppers or tomatoes to the shrimp for extra flavor and texture.
Enjoy your flavorful and comforting Spicy Shrimp and Grits!
