Grilled Shrimp with Roasted Vegetables and Cauliflower Rice
Ingredients:
* For the shrimp:
* 1 lb large shrimp, peeled and deveined
* 1 tablespoon olive oil
* 1/4 teaspoon paprika
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* For the vegetables:
* 1 head broccoli, cut into florets
* 1 red bell pepper, sliced
* 1 yellow bell pepper, sliced
* 1 cup mushrooms, sliced
* 1 tablespoon olive oil
* 1/2 teaspoon garlic powder
* 1/4 teaspoon paprika
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* For the cauliflower rice:
* 1 head cauliflower, riced
* 1 tablespoon olive oil
* 1/4 teaspoon garlic powder
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
Instructions:
* Prepare the shrimp: In a medium bowl, combine shrimp, olive oil, garlic powder, paprika, salt, and pepper. Toss to coat.
* Prepare the vegetables: In a large bowl, combine broccoli florets, bell peppers, mushrooms, olive oil, garlic powder, paprika, salt, and pepper. Toss to coat.
* Prepare the cauliflower rice: In a large skillet, heat olive oil over medium heat. Add cauliflower rice, garlic powder, salt, and pepper. Cook for 5-7 minutes, or until cauliflower is tender.
* Grill the shrimp: Heat grill to medium-high heat. Grill shrimp for 2-3 minutes per side, or until cooked through.
* Roast the vegetables: Spread vegetables in a single layer on a baking sheet. Roast in preheated oven for 20-25 minutes, or until tender.
* Assemble the dish: Divide cauliflower rice among bowls. Top with roasted vegetables and grilled shrimp. Garnish with fresh parsley and sesame seeds, if desired.

* You can use your favorite vegetables for this dish.
* If you don't have a grill, you can cook the shrimp in a skillet over medium heat.
