Ingredients (for 2 people)

For the steak:

2 pieces of skirt steak (approximately 200-250g each)
1 tablespoon of vegetable oil (colza or sunflower)
Freshly ground salt and black pepper
For the herb butter:
50 g of soft butter (at room temperature)
1 clove of garlic finely chopped
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chives
1 teaspoon of fresh or dried thyme
A pinch of salt and black pepper.
For the garnish:
A few strands of parsley, coriander or fresh basil (according to your taste)
Lemon quarters (optional, for a touch of coolness)

Preparation

Step 1: Prepare the Herb Butter

In a bowl, mix soft butter with garlic, parsley, chives and thyme.
Add a pinch of salt and black pepper, then mix well until you get a smooth texture.
Form a small cylinder with butter, wrap it in food film, and place it in the refrigerator to solidify (about 15 minutes).
 
Step 2: Steak prep
Take steaks out of the fridge 20-30 minutes before cooking to bring them to room temperature.
Dry them with absorbent paper, then season generously with salt and pepper on both sides.
 
Step 3: Cook the Steak
Heat a cast iron skillet or heavy-duty skillet over high heat until it is very hot.
Add the vegetable oil and let it heat until it starts to smoke slightly.
Drop the steaks in the skillet and sause them about 2-3 minutes on each side for a bloody cook. Adjust according to thickness and desired baking.
Once cooked, remove the steaks from the pan and let them sit under a tin foil for 5 minutes.
 
Step 4: Dress up and serve
Drop a generous slice of herb butter over each steak that is still hot to melt gently.
Garnish with fresh herbs (parsley, coriander or basil).
Serve immediately with your choice of sides, such as mashed potatoes, roasted vegetables or green salad.
Tips
For a tender steak: always slice the skirt perpendicularly to the fibers before serving. It ensures a softer texture.
For more flavor: Add a lime zest or a pinch of flower salt just before serving.
