Tuna Protein Power Bowl 


Ingredients:
Base:
1 cup shredded lettuce 
Protein:
2 boiled eggs (halved) 
Toppings:
1/4 cup canned sweet corn (drained) 
1/4 cup canned kidney beans (rinsed and drained) 
Extras:
Salt and black pepper to taste 
Optional: a wedge of lemon 
Dressing:
2 tbsp olive oil 
1 tbsp lemon juice 
1/2 tsp Dijon mustard
1/4 tsp garlic powder
Salt and pepper to taste 
Instructions:
Prepare the base:
Place the shredded lettuce evenly across the bottom of a bowl.
Add the toppings:
Arrange the tuna, boiled eggs, corn, and kidney beans in sections around the bowl.
Make the dressing:
In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, garlic powder, salt, and pepper.
Drizzle and season:
Pour the dressing over the bowl and sprinkle additional salt and black pepper over the eggs and tuna if desired.
