Ingredients:

Base:

1 cup shredded lettuce 🥬

Protein:

1 can (150g) tuna in water or olive oil (drained) 🐟
2 boiled eggs (halved) 🥚

Toppings:

1/4 cup canned sweet corn (drained) 🌽
1/4 cup canned kidney beans (rinsed and drained) 🫘

Extras:

Salt and black pepper to taste 🧂

Optional: a wedge of lemon 🍋

Dressing:

2 tbsp olive oil 🫒
1 tbsp lemon juice 🍋
1/2 tsp Dijon mustard
1/4 tsp garlic powder
Salt and pepper to taste 🧂

Instructions:

Prepare the base:

Place the shredded lettuce evenly across the bottom of a bowl.
Add the toppings:
Arrange the tuna, boiled eggs, corn, and kidney beans in sections around the bowl.
Make the dressing:
In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, garlic powder, salt, and pepper.
Drizzle and season:
Pour the dressing over the bowl and sprinkle additional salt and black pepper over the eggs and tuna if desired.
