Savory Beef Fried Rice with Fresh Vegetables
Ingredients:
2 cups cooked and cooled jasmine rice
1/2 pound beef sirloin, thinly sliced
2 tablespoons soy sauce
1 teaspoon sesame oil
2 tablespoons vegetable oil
2 eggs, lightly beaten
1 small onion, finely diced
1 cup mixed vegetables (peas, carrots, and corn)
2 cloves garlic, minced
2 tablespoons oyster sauce
1 tablespoon hoisin sauce
1/4 teaspoon black pepper
Green onions, chopped (for garnish)
Sesame seeds (optional for garnish)
Directions:
Marinate the Beef:
Marinate the Beef:
In a bowl, mix the beef slices with 1 tablespoon of soy sauce and sesame oil. Let it marinate for 10-15 minutes.
Cook the Beef:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Stir-fry the beef until browned and cooked through, about 3-4 minutes. Remove from the skillet and set aside.
Scramble the Eggs:
In the same skillet, heat 1 tablespoon of vegetable oil. Add the beaten eggs and scramble until just set. Push the eggs to one side of the skillet.
Cook the Vegetables:
Add the onion and mixed vegetables to the skillet. Sauté for 2-3 minutes, then stir in the garlic and cook for another minute until fragrant.
Combine and Season:
Add the cooked rice to the skillet, breaking up any clumps. Stir well to combine with the vegetables and eggs. Return the cooked beef to the skillet.
Mix in the oyster sauce, hoisin sauce, and remaining soy sauce. Stir-fry for 2-3 minutes until the rice is heated through and everything is evenly coated.
Serve:
Garnish with chopped green onions and sesame seeds, if desired. Serve hot and enjoy!
