Ingredients
For the Chocolate Sponge Cake
4 large eggs, room temperature
½ cup (100g) granulated sugar
1 tsp vanilla extract
½ cup (60g) all-purpose flour
¼ cup (25g) unsweetened cocoa powder
1 tsp baking powder
1 pinch salt
Powdered sugar (for dusting)
For the Filling
1 ½ cups (360ml) heavy cream
2 tbsp powdered sugar
1 tsp vanilla extract
1 cup (150g) fresh cherries, pitted and halved (or jarred cherries, drained)
2 tbsp cherry syrup or liqueur (optional)
For the Garnish
Shaved chocolate or chocolate curls
Whole cherries (for decoration)
Instructions
Make the Chocolate Sponge Cake
Preheat your oven to 350°F (175°C). Grease and line a 10x15-inch (25x38cm) jelly roll pan with parchment paper.
In a large bowl, whisk the eggs and granulated sugar together until the mixture becomes thick and pale (about 5-7 minutes).
Gently fold in the vanilla extract, flour, cocoa powder, baking powder, and salt, using a spatula to combine.
Pour the batter into the prepared pan, spreading it out evenly.
Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
As soon as it’s out of the oven, flip the cake onto a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper.
Roll the cake up with the towel, starting from one short end, and let it cool completely.
Make the Whipped Cream Filling
In a chilled mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Be careful not to over-whip.
Assemble the Swiss Roll
Once the cake is cool, unroll it gently and spread a generous layer of whipped cream on top, leaving a small border around the edges.
Scatter the cherry halves evenly over the cream, reserving a few for garnish.
Optionally, drizzle the cake with cherry syrup or liqueur for extra flavor.
Carefully roll the cake back up, starting from one short end, using the towel as a guide.
Garnish and Serve
Transfer the rolled cake to a serving platter.
Spread a little more whipped cream on top and garnish with shaved chocolate, whole cherries, or additional cherry halves.
Chill the Swiss roll for at least 1 hour to allow the flavors to meld.
Serve
Slice the Swiss roll into individual servings and enjoy the decadent combination of light, fluffy cake, rich cream, and sweet cherries!
Tips
For extra flavor, you can add a small splash of cherry liqueur or vanilla extract to the whipped cream.
If you can’t find fresh cherries, jarred or frozen cherries will work well. Just make sure to drain them properly.
To make the Swiss roll even more indulgent, drizzle some chocolate ganache on top before serving.
This Black Forest Swiss Roll is a perfect indulgence for any chocolate and cherry lover. It’s the ideal dessert to impress your guests or to satisfy a sweet craving!
