Heavenly No-Bake Chocolate Mousse Cake 🍫🍰

Ingredients:

For the Crust:

1 1/2 cups graham cracker crumbs
1/4 cup unsweetened cocoa powder
1/4 cup melted butter
1/4 cup granulated sugar

For the Mousse Filling:

8 oz semisweet or bittersweet chocolate, chopped
2 cups heavy cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
1/2 cup mascarpone cheese or cream cheese (optional for extra creaminess)

Directions:

Prepare the Crust:

In a medium bowl, combine the graham cracker crumbs, cocoa powder, melted butter, and sugar. Stir until the mixture is well combined and resembles wet sand. Press this mixture into the bottom of a springform pan or pie pan, creating a firm, even crust. Set it aside.

Make the Chocolate Mousse:

In a heatproof bowl, melt the chopped chocolate over a double boiler or microwave in 20-second intervals, stirring between each. Once melted, remove from heat and allow the chocolate to cool slightly.

Whip the Cream:

In a large mixing bowl, whip the heavy cream and powdered sugar together until stiff peaks form. This may take 3-5 minutes with an electric mixer.

Combine the Ingredients:

In another bowl, whisk the mascarpone cheese (if using) and vanilla extract until smooth. Gently fold in the melted chocolate into the mascarpone mixture until well combined. Then, carefully fold in the whipped cream, a little at a time, until the mousse is light and fluffy.

Assemble the Cake:

Spoon the mousse filling over the prepared crust, smoothing it out with a spatula. Refrigerate for at least 4 hours or overnight to allow the mousse to set.
Serve and Enjoy:
Once set, carefully remove the sides of the springform pan. Slice the cake and serve chilled. You can garnish with shaved chocolate, whipped cream, or berries if desired.
