cheesy Arancini
Ingredients:
* Risotto: (Use your favorite recipe or leftover risotto)
* Breadcrumbs: Plain or seasoned.
* Eggs: 2, beaten.
* Flour: 1/2 cup.
* Oil: For frying (vegetable or canola).
* Salt & Pepper: To taste.
* Optional: Chopped parsley for garnish.
Instructions:
* Shape the Arancini: Take a spoonful of risotto and flatten it in your palm. Place a cube of cheese in the center. Gently enclose the cheese with the risotto, forming a ball.
* Bread the Arancini: Set up a dredging station: flour in one dish, beaten eggs in another, and breadcrumbs in the third. Roll each risotto ball first in the flour, then dip in the egg, and finally coat thoroughly with breadcrumbs.
* Fry the Arancini: Heat the oil in a deep fryer or large pot to about 350°F (175°C). Carefully add the arancini in batches (don't overcrowd). Fry for 3-5 minutes, or until golden brown and crispy.
* Drain and Serve: Remove the arancini with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Season with salt and pepper while hot. Garnish with chopped parsley, if desired.
Note: This is a simplified version. Traditional Arancini often have more complex fillings like meat ragu or peas. You can customize the filling to your liking.
