Cheesy Ranch Ground Beef and Rice Casserole

Ingredients :

- 8 slices bacon, diced
- 1 lb lean ground beef
- 1 tablespoon minced garlic
- 1 cup instant rice
- 10.5 oz condensed cheddar soup
- 1 1/4 cups milk
- 1 oz ranch dressing mix
- 3 cups shredded Mexican cheese blend
- 1 1/4 cups chopped green onions

Directions:

1. Preheat the oven to 350°F (175°C).
2. In a large skillet over medium-high heat, cook the diced bacon until crispy. Transfer to a paper towel-lined plate using a slotted spoon.
3. In the same skillet, cook the ground beef until browned, breaking it apart. Drain excess grease.
4. Stir in minced garlic and cook for 2-3 minutes.
5. Remove from heat and stir in instant rice.
6. Add condensed cheddar soup, milk, and ranch dressing mix, stirring until combined.
7. Mix in 1 cup of shredded cheese, 1 cup of chopped green onions, and two-thirds of the cooked bacon.
8. Transfer the mixture to a greased 9x13-inch baking dish, spreading evenly.
9. Cover with foil and bake for 40 minutes.
10. Remove foil, sprinkle remaining shredded cheese and cooked bacon on top.
11. Return to the oven and bake uncovered until bubbly and cheese is melted, about 5-10 minutes.
12. Let it rest for a few minutes before garnishing with remaining chopped green onions.
