Ingredients
For the Broccoli:
For Garnish:
1. Marinate the Chicken
Pat the chicken breasts dry with paper towels.
In a bowl, combine:
Garlic
Lemon juice
Olive oil
Thyme
Rosemary
Oregano
Salt and pepper
Add the chicken and coat well with the marinade.
Let marinate for at least 30 minutes (or up to 4 hours) in the fridge.
Pro Tip: The longer it marinates, the more flavorful it becomes!
2. Grill the Chicken
Preheat a grill or grill pan to medium-high heat.
Brush with a little olive oil to prevent sticking.
Place the chicken on the grill and cook for 5–6 minutes on each side, until golden and cooked through.
Let rest for 5 minutes before slicing.
Pro Tip: Don’t press down on the chicken while grilling—it’ll release juices and make it dry!
3. Steam the Broccoli
Bring 1 inch of water to a boil in a saucepan.
Place the broccoli florets in a steamer basket over the boiling water.
Cover and steam for 4–5 minutes until tender but still vibrant green.
Remove from heat and toss with:
Minced garlic
Salt
Lemon juice (if using)
Pro Tip: For extra flavor, drizzle with a touch of olive oil or melted butter.
4. Prepare the Avocado and Tomato Salad

In a bowl, combine:
Cherry tomatoes
Avocado slices
Drizzle with:
Olive oil
Lemon juice
Salt and pepper
Toss gently to combine.
Pro Tip: Add a handful of baby arugula or spinach for extra greens!
5. Plate and Garnish
Slice the grilled chicken into thin strips.
Arrange the broccoli, avocado, and cherry tomatoes around the chicken.
Garnish with:
Chopped fresh parsley
Lemon wedges on the side
