Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar (for crust)
- 1/2 cup melted butter
- 3 (8 oz) packages cream cheese, softened
- 1 cup sugar (for cheesecake)
- 1 tsp vanilla extract
- 3 large eggs
- 1/2 cup heavy cream
- 1/4 cup sugar (for caramelizing)
Directions:
First, preheat your oven to 325°F (163°C). In a mixing bowl, combine the graham cracker crumbs, 1/4 cup of sugar, and melted butter. Press this mixture firmly into the bottom of a springform pan to create a deliciously crunchy crust.
In another bowl, beat together the softened cream cheese and 1 cup of sugar until it’s smooth and creamy. Then, add in the vanilla extract and the eggs one at a time, mixing well after each addition. Finally, stir in the heavy cream to give your cheesecake that luscious texture.
Pour your cheesecake batter over the prepared crust and pop it in the oven. Bake for about 50-60 minutes, until it’s set but still slightly jiggly in the center — it will firm up as it cools.
Once done, let the cheesecake cool completely before transferring it to the refrigerator. Chill it for at least 4 hours or even better, overnight if you can wait!
Before serving, sprinkle the remaining 1/4 cup of sugar evenly over the top. Using a kitchen torch, caramelize the sugar until it’s golden brown and bubbly. Slice it up, serve, and enjoy the indulgence!
