Ingredients:
1 1⁄2 cups crushed Oreo cookies
1⁄4 cup unsalted butter, melted
24 oz cream cheese, softened
1 cup sugar
3 large eggs
2 tbsp lemon juice
1 tbsp lemon zest
1⁄2 cup sour cream
Directions:
Preheat oven to 325°F (163°C) and grease a 9-inch springform pan. Combine crushed Oreo cookies and melted butter. Press mixture into the bottom of the pan to form the crust. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each. Stir in lemon juice, lemon zest, and sour cream until combined. Pour the cheesecake mixture over the crust and smooth the top. Bake for 50-60 minutes, or until the center is set but slightly jiggly. Let cool completely, then refrigerate for at least 4 hours. Serve chilled and garnish with additional crushed Oreos if desired.
Prep time is about 20 minutes, with a cooking time of 50-60 minutes. You’ll want to allow for at least 4 hours of chilling before serving.
