Mediterranean Baked Fish
Herb-Crusted Mediterranean Baked Fish with Lemon and Olive Oil
Ingredients:
4 fillets of white fish (cod, haddock, or sea bass) 

2 lemons (zested and juiced) 

3 garlic cloves, minced 

1/4 cup extra virgin olive oil 

1/4 cup fresh parsley, chopped 

1 tablespoon fresh oregano, chopped
1 teaspoon paprika 

Salt and black pepper to taste
1/3 cup cherry tomatoes, halved 

1/3 cup Kalamata olives, pitted
1/4 cup capers (optional)
1 small red onion, thinly sliced
Directions:
Preheat your oven to 375°F (190°C).
Place the fish fillets in a baking dish and drizzle with olive oil.
In a small bowl, mix lemon zest, garlic, parsley, oregano, paprika, salt, and pepper. Rub this mixture evenly over the fish.
Scatter the cherry tomatoes, olives, capers, and red onion around the fillets. Pour the lemon juice over the fish and vegetables.
Cover the dish with foil and bake for 15-18 minutes, or until the fish flakes easily with a fork.
Remove the foil for the last 5 minutes of baking to allow the fish to brown slightly on top.
Serve immediately, garnished with additional fresh parsley and a slice of lemon.
