#### **Ingredients:**
- 500g mixed fresh fruits (e.g., strawberries, blueberries, grapes, pineapple, and kiwi)
- 200g cream cheese, softened
- 100g powdered sugar
- 200ml heavy whipping cream
- 1 tsp vanilla extract
- 100g caramel sauce (store-bought or homemade)
- 50g crushed graham crackers (for crunch)
- 50g crushed toffee or caramel pieces (optional, for extra crunch)
#### **Instructions:**
1. **Prepare the Fruit:**
- Wash and chop the mixed fresh fruits into bite-sized pieces. Place them in a large mixing bowl.
2. **Make the Cheesecake Filling:**
- In a separate bowl, beat the softened cream cheese with the powdered sugar until smooth and creamy.
- Add the heavy whipping cream and vanilla extract. Continue beating until the mixture thickens and forms soft peaks.
3. **Assemble the Salad:**
- Gently fold the cheesecake filling into the chopped fruits, making sure the fruit is evenly coated.
4. **Add Caramel and Crunch:**
- Drizzle the caramel sauce over the fruit mixture, then sprinkle the crushed graham crackers and toffee/caramel pieces on top for added crunch.
5. **Serve:**
- Serve immediately or chill in the refrigerator for about 30 minutes before serving. This allows the flavors to meld together.
6. **Garnish (Optional):**
- Top with additional caramel drizzle or a few fresh mint leaves for a decorative touch.
