**Ingredients:**

**For the crust:**

- 1 ½ cups (150g) graham cracker crumbs (or digestive biscuits)
- ¼ cup (50g) sugar
- 6 tbsp (85g) melted butter

**For the filling:**

- 24 oz (675g) cream cheese (softened)
- 1 cup (200g) granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup (175g) semi-sweet chocolate chips
- ½ cup (120ml) sour cream or heavy cream

**For topping (optional):**

- Extra chocolate chips or chocolate shavings
- Whipped cream

**Instructions:**

1. **Prepare the crust:**
Preheat oven to 160°C (325°F).
Mix graham cracker crumbs, sugar, and melted butter in a bowl.
Press the mixture into the bottom of a springform pan. Bake for 10 minutes, then let cool.
2. **Make the filling:**
In a large bowl, beat the cream cheese and sugar until smooth and creamy.
Add eggs one at a time, beating well after each.
Stir in vanilla and sour cream.
Fold in chocolate chips gently with a spatula.
3. **Bake the cheesecake:**
Pour the filling into the crust. Tap the pan to release air bubbles.
Bake for 50–60 minutes, until the center is just slightly jiggly.
Turn off oven, leave the cake inside with the door slightly open for 1 hour.
Then refrigerate for at least 4 hours (preferably overnight).
4. **Serve:**
Top with whipped cream and extra chocolate chips or shavings if desired.
