Ingredients:

Crust:

1 cup digestive biscuit crumbs
1/2 cup roasted pistachios, finely ground
1/4 cup unsalted butter, melted

Pistachio Layer:

1 cup pistachio paste
1/2 cup confectioners' sugar
2 cups heavy cream, chilled
1/2 teaspoon almond extract

Topping:

1/2 cup chopped pistachios
Whole pistachios for garnish

Directions:

Combine digestive biscuit crumbs, ground pistachios, and melted butter. Press into the bottom of a springform pan to form the crust. Chill in the refrigerator.
For the pistachio layer, mix pistachio paste and confectioners' sugar in a bowl. In a separate bowl, whip the heavy cream to stiff peaks, then fold into the pistachio mixture with almond extract.
Spread the pistachio mousse evenly over the crust and refrigerate until set, about 4 hours.
Once set, sprinkle chopped pistachios over the top and garnish with whole pistachios before serving.
