- 2 cups cola (preferably a craft or gourmet version)
- 1 cup coconut milk (canned for creaminess)
- 1/2 cup cherry juice (preferably unsweetened)
- 1/4 cup honey or maple syrup (adjust based on sweetness preference)
- 1 teaspoon vanilla extract
- 1/2 cup fresh or frozen cherries, chopped
- 1 tablespoon fresh lemon juice
- Pinch of sea salt

1. In a mixing bowl, combine the coconut milk, honey or maple syrup, vanilla extract, and a pinch of sea salt. Whisk until smooth and well incorporated.
2. In another bowl, mix the cola and lemon juice. This will enhance the cola flavor while adding a slight tang.
3. Prepare your popsicle molds by placing them on a baking sheet for easy handling.
4. Fill each popsicle mold halfway with the cola mixture. Then, add a layer of the coconut milk mixture over the cola, filling the molds to about three-quarters full.
5. In a small bowl, combine the chopped cherries with the cherry juice. Stir until the cherries are well coated. Drop spoonfuls of the cherry mixture into the popsicle molds, using a skewer or toothpick to swirl it gently into the other layers.
6. Insert popsicle sticks into the molds and freeze for at least 6-8 hours, or until completely solid.
