Mediterranean Grilled Chicken with Roasted Potatoes and Herbed Feta
Ingredients:
4 boneless, skinless chicken breasts
3 tablespoons olive oil
2 tablespoons fresh lemon juice
3 cloves garlic, minced
2 teaspoons dried oregano
Salt and black pepper, to taste
1 ½ pounds baby potatoes, halved
1 teaspoon smoked paprika
1 tablespoon chopped fresh rosemary
1 cup crumbled feta cheese
2 tablespoons chopped fresh parsley
Zest of 1 lemon
Optional: Kalamata olives for garnish
Directions:
In a small bowl, whisk together 2 tablespoons olive oil, lemon juice, garlic, oregano, salt, and pepper.
Place chicken breasts in a shallow dish and pour marinade over them. Cover and refrigerate for at least 30 minutes.
Preheat oven to 400°F (200°C). Toss halved baby potatoes with remaining olive oil, paprika, rosemary, salt, and pepper. Spread on a baking sheet and roast for 30–35 minutes, until golden and tender.
While potatoes roast, preheat a grill or grill pan over medium-high heat. Grill marinated chicken for 6–7 minutes per side, or until internal temperature reaches 165°F (74°C). Let rest for 5 minutes.
In a small bowl, mix crumbled feta with chopped parsley and lemon zest.
Plate grilled chicken with a generous portion of roasted potatoes, then top everything with herbed feta and optional olives. Serve warm.
