🍌 Banana Walnut Layer Cake Recipe

Soft sponge layers filled with creamy custard, ripe bananas, and crunchy walnuts. A light yet satisfying homemade cake — perfect for special occasions or cozy tea times! 🌰🍰
🧁 Ingredients:
For the sponge cake:
• 4 eggs
• 1 cup granulated sugar
• ½ cup milk
• ½ cup vegetable oil
• 1½ cups all-purpose flour (sifted)
• 1 packet baking powder (10 g)
• 1 tsp vanilla extract
For the custard cream:
• 3 cups milk
• 3 tbsp flour
• 2 tbsp cornstarch
• ½ cup sugar
• 1 egg yolk
• 1 tsp vanilla extract
• 1 tbsp butter
• Optional: 100 ml whipping cream (for a smoother texture)
For the filling:
• 2–3 ripe bananas (sliced)
• ½ cup finely chopped walnuts
• Milk (to moisten the cake layers)
For topping:
• Whipped cream or remaining custard
• Banana slices, walnuts, coconut flakes or chocolate shavings for decoration

👩‍🍳 Instructions:

1 Prepare the cake:Beat eggs and sugar until light and fluffy. Add milk and oil, mix briefly.Fold in flour, baking powder, and vanilla.Pour into a lined round pan and bake at 170°C (340°F) for 30–35 minutes.Let it cool, then slice into two or three layers.
2 Make the custard:In a saucepan, mix milk, flour, cornstarch, sugar, and egg yolk. Cook over medium heat, stirring constantly until thick.Remove from heat, stir in butter and vanilla.Let it cool, then fold in whipped cream if using.
3 Assemble the cake:Place the first sponge layer on a serving plate and lightly moisten with milk.Spread custard, add banana slices and sprinkle with walnuts.Repeat with the second layer, then cover the top and sides with cream.
4 Decorate:Top with banana slices, extra walnuts, and a dusting of coconut or chocolate.
5 Chill for at least 3 hours (overnight is even better). Serve cold.
