Recipe for the fluffy orange and coconut cake
Ingredients for the cake
3 eggs
100 grams of sugar
150 ml of neutral oil
150 ml of fresh orange juice
100 grams of flour
1 bag of chemical yeast
Ingredients for the syrup
200 milliliters of water
150 grams of sugar
1 tablespoon of lemon juice
For the decoration
A couple of thin orange slices.

Steps of preparation
* Preparation of the syrup: In a saucepan, mix water and sugar. Bring to a boil then let simmer for 10 minutes. Add the lemon, remove from fire and let cool completely.
*Preparation of the pate: In a large bowl, beat the eggs with sugar until the mixture is white.
* Add the oil, orange juice and zest, then mix well.
*Include semolina, flour and chemical yeast. Mix until you get a homogeneous preparation.
* Cooking: Pour the pate in a rectangular mold before buttering. Bake at 180 degrees for about 30 to 35 minutes, until the top is just golden brown.
* Imbibage: From the oven, pour the cold syrup on the cake that is still hot. The cake will soak up all the liquid.
*Finish: Let it cool completely. Cut some squares to equal size. On each square, place a small pinch of raped coconut and a piece of fresh orange.
