Perfect Fried Meat Pie
Ingredients
For the dough
* 4 cups (500 g) all-purpose flour
* 1 tsp salt
* 150 g butter or margarine
* 1 egg
* ½–¾ cup water, as needed
For the filling
* 300 g minced beef
* 1 medium potato, diced small
* 1 medium carrot, diced small
* ½ onion, chopped
* 1 tsp curry powder
* ½ tsp thyme
* 1 seasoning cube
* Salt to taste
* ½ cup water or stock
* 1 tbsp flour mixed with 2 tbsp water, for thickening
For frying
* Vegetable oil, enough for deep frying
Method
1. Make the filling: Heat a little oil and sauté the onion. Add the minced beef and cook until browned.
2. Add the diced potato, carrot, curry, thyme, seasoning cube, salt and water/stock. Cover and cook until the vegetables are tender.
3. Stir in the flour slurry and cook for 1–2 minutes until the filling thickens. Allow it to cool completely.
4. Make the dough: Mix flour, salt and sugar. Rub in the butter/margarine until crumbly.
5. Add the egg and gradually add water, mixing until a soft, smooth dough forms. Don't over-knead.
6. Roll out the dough and cut into circles.
7. Place some cooled meat filling in the centre. Fold over to form a half-moon and seal the edges firmly with a fork.
8. Heat enough vegetable oil over medium heat.
9. Fry the meat pies in batches, turning occasionally, until golden brown and crisp.
10. Remove and drain on a paper towel
