Creamy Herb Chicken Thigh with Mash & Glazed Carrots

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬
- 1 large chicken thigh, skin-on preferred
- 2 medium potatoes, peeled and chopped
- 5–6 baby carrots or small whole carrots
- 1 tbsp olive oil
- 1 tbsp butter, plus 1 tsp for carrots
- 2 tbsp milk or cream
- 1 garlic clove, minced
- ¼ cup chicken broth
- 2 tbsp heavy cream
- 1 tsp Dijon mustard
- ½ tsp dried thyme or mixed herbs
- 1 tbsp chopped parsley
- Salt and freshly cracked black pepper, to taste
- Pinch of paprika, optional
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬
1. Make the mash: Boil the potatoes in salted water for 12–15 minutes until fork-tender. Drain, then mash with butter, milk or cream, salt, and black pepper until fluffy and creamy.
2. Season the chicken: Pat the chicken thigh dry. Season with salt, pepper, paprika, and dried herbs.
3. Sear the chicken: Heat olive oil in a skillet over medium heat. Cook the chicken skin-side down for 6–8 minutes until golden and crisp, then flip and cook until the center reaches 165°F (74°C).
4. Glaze the carrots: Simmer or steam the carrots until tender, then toss with butter, salt, pepper, and a sprinkle of parsley.
5. Make the creamy sauce: In the chicken pan, add garlic and cook for 30 seconds. Stir in chicken broth, Dijon mustard, cream, thyme, and black pepper. Simmer until slightly thick and glossy.
6. Plate it up: Spoon the mashed potatoes on one side of a gray bowl-plate, place the chicken thigh in the center, and arrange the carrots on the side.
7. Pour the creamy herb sauce over the chicken and a little around the mash. Finish with chopped parsley. Cozy, saucy, and ready to crush.
