Meatloaf with Cheese - Step-by-Step Recipe

Juicy, Homemade, and Delicious
Ingredients
For the Roll
- 1 kg ground beef
- 250 g bacon strips
- 2 eggs
- 1/2 cup breadcrumbs
- 1/4 finely chopped onion
- 1/4 cup chopped fresh cilantro
- 2 minced garlic cloves
- 1 teaspoon salt
- 1/2 teaspoon black pepper
For the Filling
- 250 g sliced Manchego cheese
- 3 bell peppers (different colors)
- 50 g slivered almonds
- 1 tablespoon olive oil
Step-by-Step Preparation
1. Prepare the meat. Mix the ground beef with the eggs, breadcrumbs, onion, cilantro, garlic, salt, and pepper until well combined.
2. Prepare the filling. Dice the bell peppers and sauté them in olive oil for 4–5 minutes. Add the almonds, cook for 1 more minute, and let cool.
3. Spread the meat. Place plastic wrap on a flat surface. Arrange the bacon strips slightly overlapping and spread the meat on top, forming an even rectangle.
4. Add the filling. Place the Manchego cheese slices on the meat and distribute the sautéed bell peppers and almonds, leaving the edges free.
5. Roll it up. Carefully roll it up using the plastic wrap, making sure the bacon covers the outside. Remove the plastic wrap completely and place the roll in a baking dish lined with parchment paper.
6. Bake. Bake in a preheated oven at 180°C (350°F) for approximately 60–75 minutes, until the meat is cooked through and the bacon is golden brown. The center should reach 71°C (160°F).
7. Let it rest and serve. Remove from the oven, let it rest for 10–15 minutes, and slice it thickly to keep the filling juicy.
Grandma's tip: Don't press the meat too hard when rolling it up. This way, it will stay juicy, with the cheese melted in the center and the bacon crispy on the outside.
