TURKISH RED LENTIL PATTIES (MERCIMEK KÖFTESI)
Looking for a flavorful plant-based meal? These Turkish-inspired lentil patties are packed with herbs, gentle spices, and fresh lemon flavor. They're satisfying, budget-friendly, and delicious served in crisp lettuce leaves!
INGREDIENTS
- 1 cup red lentils, rinsed
- 2½ cups water
- ¾ cup fine bulgur
- 1 small onion, finely chopped
- 2 tbsp olive oil
- 1 tbsp tomato paste
- 2 tbsp chopped fresh parsley
- 2 scallions, finely sliced
- 1 tsp ground cumin
- ½ tsp paprika
- Salt and black pepper to taste
- Lemon wedges and lettuce leaves, for serving
HOW TO MAKE THEM
1. Simmer the red lentils in water for about 15–20 minutes, until very soft and most of the water is absorbed.
2. Stir in the fine bulgur, cover, and let it stand for 15–20 minutes so the bulgur softens.
3. Meanwhile, sauté the onion in olive oil until soft. Stir in the tomato paste, cumin, and paprika.
4. Add the onion mixture to the lentils and bulgur. Mix thoroughly and allow to cool until comfortable to handle.
5. Fold in the parsley and scallions. Season with salt, pepper, and a squeeze of lemon.
6. With clean hands, shape into small elongated patties. Serve on lettuce leaves with extra lemon.
Helpful tip: If the mixture feels too wet, let it rest uncovered for a few minutes before shaping.
