Ingredients:
2 cups all-purpose flour
2 tablespoons sugar
1/2 teaspoon salt
2 eggs
1 3/4 cups milk
1/2 cup vegetable oil or melted butter
1 teaspoon vanilla extract
Directions:
In a large bowl, whisk together flour, sugar, baking powder, and salt.
In another bowl, beat the eggs and then add milk, vegetable oil (or melted butter), and vanilla extract. Mix well.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
Preheat your waffle iron according to the manufacturer's instructions.
Pour the batter onto the hot waffle iron, using about 1/2 cup for each waffle.
Cook until the waffles are golden brown and crisp, about 3-5 minutes, depending on your waffle iron.
