• 1 pre-made shortbread pie crust
• 1/2 cup powdered sugar
• 1 teaspoon vanilla extract
• 1 cup heavy whipping cream
• 2 cups fresh strawberries, diced
Directions:
. In a large mixing bowl, beat the cream cheese until smooth.
. Add powdered sugar and vanilla extract, continue beating until well combined and creamy.
. In a separate bowl, whip the heavy cream until stiff peaks form.
. Gently fold the whipped cream, and diced strawberry into the cream cheese mixture until fully incorporated.
. Carefully spread the creamy mixture into the bottom of the pie crust.
. Arrange additional sliced strawberries on top for decoration, if desired.
. Chill the pie in the refrigerator for at least 4 hours, or until set.
