Three-Cheese Seafood Cheesesteak

- 1/2 pound shrimp, peeled and deveined
- 1/2 pound scallops
- 1/2 pound crab meat, shredded
- 1 tablespoon olive oil
- 1 onion, thinly sliced
- 1 bell pepper, thinly sliced
- 2 cloves garlic, minced
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1/4 cup mayonnaise
- 1 tablespoon mustard
- 1 cup mozzarella cheese, shredded
- 1/2 cup cheddar cheese, shredded
- 1/2 cup provolone cheese, shredded

1. In a large skillet, heat the olive oil over medium heat. Add the onion, bell pepper, and garlic, and sauté until softened, about 5 minutes.
2. Add the shrimp and scallops to the skillet, seasoning with smoked paprika, salt, and pepper. Cook until the seafood is just cooked through, about 5 minutes.
3. Stir in the crab meat and remove from heat.
4. In a small bowl, mix together the mayonnaise and mustard. Spread this mixture on the inside of the toasted hoagie rolls.
5. Divide the seafood mixture between the rolls. Top each with mozzarella, cheddar, and provolone cheese.
6. Place the sandwiches under a broiler for 2-3 minutes, or until the cheese is melted and bubbly.
