Ingredients:

For the Cod:

1 lb cod fillets, cut into portions
1 cup all-purpose flour
1/4 cup cornstarch
1 tsp baking powder
1 tsp paprika
Salt and pepper, to taste
1 cup cold sparkling water
Oil for frying

For the Onion Rings:

2 large onions, sliced into thick rings
1 cup all-purpose flour
1/4 cup cornstarch
1 tsp paprika
Salt and pepper, to taste
1 cup cold sparkling water

Instructions:

Heat the Oil: In a deep skillet or pot, heat oil to 350°F (175°C) for frying.

Prepare the Batter for Cod:

In a medium bowl, mix flour, cornstarch, baking powder, paprika, salt, and pepper.
Gradually whisk in cold sparkling water until smooth.

Batter and Fry the Cod:

Dip each piece of cod into the batter, letting excess drip off. Carefully place in hot oil and fry for 4-5 minutes, or until golden brown and crispy.
Remove and place on paper towels to drain.

Prepare the Onion Rings:

In another bowl, mix flour, cornstarch, paprika, salt, and pepper. Add cold sparkling water and whisk until smooth.
Dip each onion ring into the batter, allowing excess to drip off, and carefully fry until golden and crispy, about 2-3 minutes per side. Drain on paper towels.

Serve the Platter:

Arrange the fried cod and onion rings on a serving platter. Garnish with lemon wedges and fresh parsley.
